Slaughterhouse Processes in the Meat Industry
Slaughter Line – There are two sections used in the slaughter line | Dirty Section | Clean Section
This section covers the process of preparing an animal for consumption, starting from where it is bound or hung for slaughter.
The animal will then be either stunned or ritually killed before being cut. Once cut, the animal is allowed to bleed on the line.
Slaughter Line- Clean Section
This stage involves the removal of internal organs, which is done under strict hygienic conditions to prevent carcass contamination.
The organs are inspected for signs of disease, and parts fit for consumption are processed separately.
Cooling Rooms
The animal carcasses are hung from railing systems and transferred to cooling rooms for preservation. The meat is chilled to a maximum core temperature of 2°C before proceeding to the next stage or shipment.
It is essential to rapidly cool the carcasses in the cooling room to prevent bacterial growth, which is crucial for preserving meat quality and extending shelf life.
Deboning
This section is equipped with tables and cutting tools to divide carcasses into commonly consumed and wholesale portions such as ribs, loins, steaks, wings, and legs.
Processing
This stage may involve additional processing, such as grinding, cutting, and preparing value- added products like sausages or marinated meats.
Packing
In the packing section, all items can be packaged for shipping. Deboned or processed items can be vacuum-packed in wholesale or consumer packaging and sent fresh or froze
Expedition
This is a place where different types of goods are collected for transportation. Whole, half, or quartered carcasses can be loaded onto trucks at this site. Processed beef that has been deboned is also packed for shipment and can either be stacked on pallets or sold at a factory outlet store.
